Ingredients
  

  • 6 large eggs, hard-boiled
  • 1/3 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice or vinegar
  • 1/4 cup celery, finely chopped
  • 2 tbsp fresh chives or dill, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Peel and chop hard-boiled eggs into bite-sized pieces.
  2. In a bowl, mix mayonnaise, Dijon, lemon juice, salt, and pepper.
  3. Fold eggs into dressing gently.
  4. Add celery and herbs and mix lightly.
  5. Chill briefly, then serve.
