Ingredients
  

  • 1/2 cup short-grain rice
  • 4 cups whole milk
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Method
 

  1. Combine rice, milk, and salt in a heavy pot. Bring to a gentle simmer.
  2. Reduce heat and cook slowly, stirring often, until rice is tender and mixture thickens.
  3. Stir in sugar and vanilla until dissolved.
  4. Remove from heat while slightly loose. Cool to desired consistency.
  5. Serve warm or chilled. Optional: broil with sugar topping.
