  • 1 box vanilla instant pudding mix
  • 2 cups cold milk
  • 1 cup mascarpone cheese
  • 1 cup strong brewed espresso or coffee, cooled
  • 20 ladyfinger cookies
  • 2 tbsp unsweetened cocoa powder

Method
 

  1. Whisk pudding mix with milk until thick.
  2. Fold mascarpone into pudding until smooth.
  3. Dip ladyfingers briefly into cooled espresso.
  4. Layer ladyfingers and pudding in cups.
  5. Dust with cocoa, cover, and chill before serving.
