Ingredients
  

  • 3 lb beef chuck roast
  • 2 large onions, sliced
  • 1 cup balsamic vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Season the chuck roast generously with salt and black pepper.
  2. Place sliced onions in the bottom of the slow cooker and set the roast on top.
  3. Pour balsamic vinegar evenly over the roast and onions.
  4. Cover and cook on low for 6–8 hours until beef is fork-tender.
  5. Serve whole or shred the beef in the sauce before serving.
