Ingredients
  

  • 1 1/2 lb boneless chicken breasts or thighs
  • 1 cup uncooked white rice
  • 1 large onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh lemon juice

Method
 

  1. Add chicken, vegetables, garlic, herbs, salt, pepper, and broth to the slow cooker.
  2. Cover and cook on low for 6 hours.
  3. Stir in rice, cover, and cook 1–2 more hours until rice is tender.
  4. Shred chicken directly in the pot.
  5. Stir in lemon juice just before serving and adjust seasoning.
