Ingredients
  

  • 4 cups corn kernels
  • 1 tbsp olive oil or butter
  • 0.5 tsp smoked paprika or chili powder
  • 0.25 tsp salt
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • 0.5 cup cotija cheese, crumbled
  • 0.25 cup fresh cilantro, chopped

Method
 

  1. Heat oil or butter in a skillet over medium-high heat and add corn.
  2. Cook corn until lightly charred, then season with paprika and salt.

  5. Serve in cups warm or chilled with extra toppings if desired.
