Ingredients
  

  • 3 cups mashed potatoes
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 0.5 cup sour cream
  • 0.5 cup grated Parmesan cheese
  • 3 tbsp chopped fresh chives or parsley
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 3 tbsp olive oil or butter (for cooking)

Method
 

  1. Combine mashed potatoes, flour, eggs, sour cream, cheese, herbs, salt, and pepper in a bowl.
  2. Mix until a thick, cohesive mixture forms.
  3. Heat oil or butter in a skillet over medium heat.
  4. Scoop mixture into the pan, flatten slightly, and cook until golden on both sides.
  5. Serve hot with sour cream or herbs if desired.
