Ingredients
  

  • 2 large eggs
  • 0.5 cup honey
  • 0.5 cup brown sugar
  • 0.5 cup unsalted butter, melted
  • 1.75 cups all-purpose flour
  • 1 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp ground allspice
  • 0.25 tsp ground nutmeg
  • 1 tsp ground ginger
  • 1 tbsp orange zest
  • 1 tbsp lemon zest
  • 1 cup chopped almonds or hazelnuts
  • 0.5 cup candied citrus peel or raisins

Method
 

  1. Preheat oven to 350°F and line a baking pan.
  2. Whisk eggs, honey, and brown sugar until smooth. Stir in melted butter and zest.
  3. Mix flour, baking powder, spices, and salt. Fold into wet ingredients.
  4. Stir in nuts and candied fruit, then spread batter evenly in pan.
  5. Bake until center is set. Cool, glaze or dust with sugar, then slice.
