Ingredients
  

  • 1 lb breakfast sausage
  • 2 cups potatoes, diced or thinly sliced
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 2 cups shredded Monterey Jack cheese
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.75 cup buttermilk
  • 0.25 cup unsalted butter, melted

Method
 

  1. Preheat oven to 375°F and grease a baking dish.
  2. Brown sausage in a skillet. Add onions, peppers, and potatoes and cook until slightly tender.
  3. Transfer filling to baking dish and sprinkle with Monterey Jack cheese.
  4. Mix flour, baking powder, salt, buttermilk, and melted butter. Spread over filling.
  5. Bake until topping is golden and cooked through. Cool briefly before serving.
