Ingredients
  

  • 3 large ripe bananas, mashed
  • 0.5 cup brown sugar
  • 0.33 cup vegetable oil
  • 1 large egg
  • 1 tbsp orange zest
  • 2 tbsp orange juice
  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp cinnamon
  • 0.5 tsp salt
  • 1 cup fresh or frozen cranberries

Method
 

  1. Preheat oven to 350°F and grease a loaf pan.
  2. Mash bananas and mix with sugar, oil, egg, zest, and juice.
  3. Stir in dry ingredients until just combined.
  4. Fold in cranberries and pour batter into pan.
  5. Bake until a toothpick comes out clean. Cool before slicing.
