Ingredients
  

  • 3 lbs Yukon Gold potatoes, peeled and chopped
  • 6 tbsp unsalted butter
  • 0.75 cup heavy cream or whole milk, warmed
  • 1.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Boil potatoes in well-salted water until fork-tender.
  2. Drain potatoes and return to pot to dry briefly over low heat.
  3. Mash potatoes while hot until smooth.
  4. Stir in butter until melted.
  5. Add warm cream gradually and season to taste.
