Ingredients
  

  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz fire-roasted diced tomatoes
  • 15 oz sweet corn, drained
  • 15 oz black beans, drained and rinsed
  • 8 oz tomato sauce
  • 1.5 cups uncooked elbow macaroni
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Brown ground beef with onion and garlic in a skillet until fully cooked.
  2. Transfer beef mixture to the slow cooker.
  3. Add tomatoes, tomato sauce, beans, corn, pasta, and seasonings. Stir gently.
  4. Cover and cook on low for 4–6 hours until pasta is tender.
  5. Stir and serve hot, adding toppings if desired.
