- Preheat oven to 375°F and line a baking sheet with parchment paper.
- Brown ground beef with onion in a skillet until cooked through. Drain grease and season with salt and pepper.
- Stir in chopped pickles and shredded cheese. Let cool slightly.
- Flatten dough rounds, add filling, fold over, and seal edges.
- Place pockets on baking sheet, brush with butter if desired, and bake 15–18 minutes until golden.
