Ingredients
  

  • 0.5 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup pecans, chopped
  • 0.5 cup pecan halves for topping

Method
 

  1. Preheat oven to 350°F and line a muffin tin.
  2. Whisk melted butter and brown sugar, then add eggs and vanilla.
  3. Stir in flour, baking powder, and salt just until combined.
  4. Fold in chopped pecans and divide batter among muffin cups.
  5. Top with pecans and bake 20–25 minutes until set.
