Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 large egg, room temperature
  • 0.75 cup fresh orange juice
  • 2 tbsp orange zest
  • 0.25 cup unsalted butter, melted
  • 1.5 cups fresh or frozen cranberries, chopped
  • 1 cup powdered sugar
  • 2 tbsp fresh orange juice for glaze

Method
 

  1. Preheat oven to 350°F and grease a loaf pan.
  2. Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.
  3. Mix egg, orange juice, zest, and melted butter until smooth.
  4. Combine wet and dry ingredients gently, then fold in cranberries.
  5. Bake for 50–55 minutes until a toothpick comes out clean.
  6. Cool completely, then drizzle with glaze.
