Ingredients
  

  • 1.5 lb fresh asparagus, trimmed and cut
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk or light cream
  • 1.5 cups shredded cheddar cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.75 cup breadcrumbs
  • 2 tbsp butter, melted (for topping)

Method
 

  1. Preheat oven to 375°F and lightly grease a baking dish.
  2. Blanch asparagus briefly, drain well, and spread into the baking dish.
  3. Melt butter in a saucepan, whisk in flour, then slowly add milk until thickened.
  4. Stir in cheddar cheese, salt, and pepper until smooth. Pour over asparagus.
  5. Mix breadcrumbs with melted butter and sprinkle evenly over the top.
  6. Bake 30–35 minutes until bubbly and golden. Rest briefly before serving.
