Ingredients
  

  • 4 large sweet onions, thinly sliced
  • 2 tbsp butter
  • 1 cup evaporated milk
  • 2 eggs, beaten
  • 1 cup shredded cheddar cheese
  • 1 sleeve Ritz-style crackers, crushed
  • 3 tbsp melted butter
  • to taste salt and pepper

Method
 

  1. Preheat oven to 350°F and grease a baking dish.
  2. Sauté sliced onions in butter until soft and translucent.
  3. Whisk evaporated milk and eggs together in a bowl.
  4. Stir onions into the custard mixture and season with salt and pepper.
  5. Fold in shredded cheese and pour mixture into the baking dish.
  6. Mix crushed crackers with melted butter and sprinkle over the top.
  7. Bake for 30–35 minutes until golden and set.
  8. Let rest for a few minutes before serving.
