- Add chicken, rice, onion, garlic, thyme, bay leaf, and broth to the slow cooker.
- Season lightly with salt and pepper and stir gently.
- Cover and cook on low for 4–5 hours or until chicken is tender and rice is cooked.
- Remove chicken, shred it, and return it to the slow cooker.
- Stir in lemon juice, adjust seasoning, and serve warm.
