Ingredients
  

  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 cup uncooked white rice
  • 6 cups chicken broth
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/4 cup fresh lemon juice
  • salt and black pepper, to taste

Method
 

  1. Add chicken, rice, onion, garlic, thyme, bay leaf, and broth to the slow cooker.
  2. Season lightly with salt and pepper and stir gently.
  3. Cover and cook on low for 4–5 hours or until chicken is tender and rice is cooked.
  4. Remove chicken, shred it, and return it to the slow cooker.
  5. Stir in lemon juice, adjust seasoning, and serve warm.
