- Preheat oven to 350°F and line baking sheets with parchment paper.
- Cream butter and sugar together until light and fluffy.
- Mix in eggs one at a time until combined.
- Add flour, baking powder, and salt; mix until a soft dough forms.
- Combine cinnamon and sugar for coating in a small bowl.
- Scoop dough, roll lightly in cinnamon sugar, and place on baking sheets.
- Bake for 10–12 minutes until lightly golden on the bottom.
- Cool briefly on the pan, then transfer to a wire rack.
