- Preheat oven to 375°F.
- Roast sweet potatoes until tender, then peel and mash until smooth.
- Mix sweet potatoes with sugar, butter, eggs, buttermilk, spices, salt, and vanilla.
- Pour filling into pie crust and smooth the top.
- Bake 45–50 minutes until edges are set and center slightly jiggles. Cool completely.
