Ingredients
  

  • 2 cups mashed roasted sweet potatoes
  • 3/4 cup brown sugar
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 unbaked pie crust

Method
 

  1. Preheat oven to 375°F.
  2. Roast sweet potatoes until tender, then peel and mash until smooth.
  3. Mix sweet potatoes with sugar, butter, eggs, buttermilk, spices, salt, and vanilla.
  4. Pour filling into pie crust and smooth the top.
  5. Bake 45–50 minutes until edges are set and center slightly jiggles. Cool completely.
