- Season beef with salt and pepper. Brown in olive oil until deeply golden.
- Cook bacon until crisp. Sauté onion and garlic in bacon fat.
- Transfer beef, bacon, and aromatics to slow cooker.
- Add wine, broth, tomato paste, vegetables, herbs, and bay leaves.
- Cook on low for 8 hours or high for 4–5 hours until beef is tender.
