Ingredients
  

  • 3 lbs beef chuck roast, cut into 2-inch cubes
  • 4 slices thick-cut bacon, chopped
  • 750 ml dry red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 4 cloves garlic, minced
  • 1 large yellow onion, chopped
  • 2 carrots, sliced
  • 8 oz mushrooms, halved
  • 1 cup pearl onions
  • 2 tablespoons all-purpose flour or cornstarch
  • 2 teaspoons fresh thyme leaves
  • 2 bay leaves
  • salt and black pepper, to taste
  • 2 tablespoons olive oil

Method
 

  1. Season beef with salt and pepper. Brown in olive oil until deeply golden.
  2. Cook bacon until crisp. Sauté onion and garlic in bacon fat.
  3. Transfer beef, bacon, and aromatics to slow cooker.
  4. Add wine, broth, tomato paste, vegetables, herbs, and bay leaves.
  5. Cook on low for 8 hours or high for 4–5 hours until beef is tender.
