Ingredients
  

  • 4 russet potatoes, peeled and diced
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • salt and black pepper, to taste

Method
 

  1. Melt butter in a pot and sauté onion and celery until soft.
  2. Add garlic and cook briefly. Stir in flour and cook 1 minute.
  3. Gradually add broth, stirring until smooth.
  4. Add potatoes and simmer until tender.
  5. Mash some potatoes, stir in cream, season, and serve with toppings.
