Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 lemon zest and juice
  • 1/2 cup plain Greek yogurt
  • 1 cup blueberries

Method
 

  1. Preheat oven to 350°F and grease a loaf pan.
  2. Whisk flour, baking powder, baking soda, and salt together.
  3. Mix butter and sugar until smooth. Add eggs, lemon zest, and juice.
  4. Stir in Greek yogurt, then add dry ingredients just until combined.
  5. Fold in blueberries and pour batter into the pan.
  6. Bake for 50–55 minutes until a toothpick comes out clean. Cool and glaze.

Notes

Toss blueberries in flour to prevent sinking and let the glaze set before slicing.
