Ingredients
  

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips or chopped peanuts (optional)

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Cream peanut butter, butter, and sugars together until smooth.
  3. Add egg and vanilla and mix until combined.
  4. Mix in flour, baking soda, and salt just until combined.
  5. Fold in optional mix-ins if using.
  6. Scoop dough into balls, place on baking sheet, and lightly press with a fork.
  7. Bake 10–12 minutes until edges are set and centers are soft.
