- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream peanut butter, butter, and sugars together until smooth.
- Add egg and vanilla and mix until combined.
- Mix in flour, baking soda, and salt just until combined.
- Fold in optional mix-ins if using.
- Scoop dough into balls, place on baking sheet, and lightly press with a fork.
- Bake 10–12 minutes until edges are set and centers are soft.
