Ingredients
  

  • 1 can chickpeas, rinsed and drained
  • 2 medium avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Rinse and drain chickpeas, then place them in a large bowl.
  2. Add tomatoes, cucumber, and red onion to the bowl.
  3. Whisk olive oil, lemon juice, salt, and pepper together.
  4. Pour dressing over the salad and toss gently to combine.
  5. Fold in diced avocado carefully and serve immediately.
