Ingredients
  

  • 3 medium zucchini, thinly sliced
  • 1 cup all-purpose flour
  • 1 cup water or milk
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried herbs (optional)

Method
 

  1. Preheat oven to 425°F and oil a baking pan.
  2. Slice zucchini thinly, salt lightly, and squeeze out moisture.
  3. Whisk flour, water, oil, salt, and pepper into a thin batter.
  4. Add zucchini to batter and toss to coat evenly.
  5. Spread mixture thinly in pan and drizzle with oil.
  6. Bake 35–40 minutes until golden and crisp on edges.
