Ingredients
  

  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup all-purpose flour
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F and grease a muffin pan well.
  2. Whisk eggs and sugar until smooth and combined.
  3. Whisk in milk, melted butter, lemon juice, zest, flour, and vanilla.
  4. Pour batter evenly into muffin cups.
  5. Bake 22–25 minutes until tops are lightly golden and centers are set.
  6. Cool completely before removing from pan and serving.
