  • 4 cups whole milk
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Method
 

  1. Combine cooked rice and milk in a saucepan and bring to a gentle simmer.
  2. Cook over medium-low heat, stirring often, until slightly thickened.
  3. Whisk eggs, sugar, cinnamon, and salt in a bowl. Slowly temper with hot milk mixture.
  4. Pour egg mixture back into saucepan and cook gently, stirring constantly, until creamy.
  5. Remove from heat and stir in vanilla. Serve warm or chilled.
