Ingredients
  

  • 1 lb ground chicken
  • 0.75 cup ricotta cheese
  • 0.5 cup breadcrumbs
  • 1 large egg
  • 0.25 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1.5 cups heavy cream
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Mix ground chicken, ricotta, breadcrumbs, egg, parmesan, and seasonings until just combined.
  2. Form meatballs and lightly brown them in a skillet, then remove and set aside.
  3. In the same skillet, melt butter, add garlic, then stir in cream and parmesan to form sauce.
  4. Add spinach and meatballs, simmer gently until meatballs are cooked through. Serve warm.
