Ingredients
  

  • 2 pounds beef chuck, cubed
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 4 cups beef broth
  • 3 cups potatoes, chopped
  • 2 cups carrots, sliced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 2 leaves bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Equipment

Method
 

  1. Season beef with salt and pepper and brown in oil in batches.
  2. Remove beef and sauté onions until soft, then add garlic and tomato paste.
  3. Stir in flour, then slowly add beef broth while stirring.
  4. Return beef to pot and add potatoes, carrots, herbs, and bay leaves.
  5. Simmer covered for 2 hours until beef is tender. Adjust seasoning and serve.
