Ingredients
  

  • 3 yellow squash, sliced into rounds
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 400°F and lightly grease a baking sheet.
  2. Arrange squash rounds in a single layer and brush with olive oil.
  3. Season squash with garlic powder, salt, and pepper.
  4. Top each round with shredded cheeses and Parmesan.
  5. Bake 18–22 minutes until squash is tender and cheese is bubbly.
  6. Broil 1–2 minutes for extra browning if desired. Serve warm.
