Ingredients
  

  • 12 oz elbow macaroni
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 1/2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Cook macaroni in salted water until tender. Drain and set aside.
  2. Melt butter in a saucepan and whisk in flour. Cook briefly.
  3. Slowly whisk in milk and cook until thickened.
  4. Lower heat and stir in cheeses until smooth. Season with salt and pepper.
  5. Add cooked pasta and stir until fully coated. Serve or bake if desired.
