A pro-chef technique using a light dusting of flour and an overnight chill to create ultra-crisp, evenly browned bacon every time.
Course: Breakfast, Technique
Cuisine: American

Ingredients

  • Bacon strips
  • All-purpose flour (for dusting)

Equipment

  • sheet pan
  • Fine-mesh sieve
  • Parchment Paper

Method

  1. Lay bacon strips on a parchment-lined baking sheet.
  2. Lightly dust both sides with all-purpose flour using a fine mesh sieve.
  3. Refrigerate uncovered overnight to dry the surface and firm the fat.
  4. Bake at 400°F (205°C) for 15–20 minutes until deeply crisp and golden.
  5. Flip in the final minutes if desired, then drain on paper towels or a rack.

Notes

For best results, dust lightly—too much flour can create a heavy coating.
