- Cook pasta in salted water until al dente. Reserve pasta water and drain.
- Brown sausage in a large skillet over medium heat. Remove and set aside.
- Add olive oil, vegetables, and garlic to the skillet. Sauté until tender.
- Stir in red pepper flakes and wine. Simmer and scrape up browned bits.
- Add crushed tomatoes, seasoning, and sausage. Simmer briefly.
- Toss pasta with sauce, adding pasta water as needed. Finish with cheese.
