Ingredients
  

  • 12 oz dry pasta
  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 cup sliced bell peppers
  • 1 cup sliced onion
  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 1 cup dry wine
  • 1 cup crushed tomatoes
  • 1 tsp Italian seasoning
  • 0.5 cup grated cheese

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Brown sausage in a large skillet over medium heat. Remove and set aside.
  3. Add olive oil, vegetables, and garlic to the skillet. Sauté until tender.
  4. Stir in red pepper flakes and wine. Simmer and scrape up browned bits.
  5. Add crushed tomatoes, seasoning, and sausage. Simmer briefly.
  6. Toss pasta with sauce, adding pasta water as needed. Finish with cheese.
