Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 cup pineapple chunks, drained
  • 0.5 cup brown sugar

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Cream butter and granulated sugar until light and fluffy.
  3. Mix in egg and vanilla until smooth.
  4. Add flour, baking powder, and salt. Mix just until combined.
  5. Scoop dough onto baking sheet and gently flatten.
  6. Top each cookie with pineapple and sprinkle with brown sugar.
  7. Bake for 12–14 minutes until edges are set. Cool before serving.
