Method
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and granulated sugar until light and fluffy.
- Mix in egg and vanilla until smooth.
- Add flour, baking powder, and salt. Mix just until combined.
- Scoop dough onto baking sheet and gently flatten.
- Top each cookie with pineapple and sprinkle with brown sugar.
- Bake for 12–14 minutes until edges are set. Cool before serving.
