Ingredients
  

  • 2 cups mashed potatoes
  • 1 cup shredded cheese
  • 2 large eggs
  • 0.25 cup milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 400°F and grease a muffin tin.
  2. Mix mashed potatoes, cheese, eggs, milk, salt, and pepper until combined.
  3. Spoon mixture into muffin cups, filling nearly full.
  4. Bake for 20–25 minutes until golden and set.
  5. Cool briefly, then remove and serve warm.
