Ingredients
  

  • 1 lb boneless chicken, diced
  • 1 tbsp olive oil
  • 1 cup long-grain rice
  • 1.5 cups chicken broth
  • 1 cup pineapple chunks, drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Heat olive oil in a pot and cook chicken until lightly browned.
  2. Remove chicken and sauté onion and garlic until fragrant.
  3. Add rice and stir to coat with oil and aromatics.
  4. Pour in broth, pineapple, and cooked chicken.
  5. Cover and simmer until rice is tender and liquid absorbed.
  6. Fluff rice, season to taste, and serve warm.
