Ingredients
  

  • 1 cup full-fat coconut milk
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 stalk lemongrass, finely chopped
  • 1 tsp red curry paste
  • 0.5 tsp turmeric powder
  • 1.5 lb boneless skinless chicken thighs
  • salt and pepper to taste

Method
 

  1. Whisk coconut milk, fish sauce, lime juice, garlic, ginger, lemongrass, curry paste, turmeric, salt, and pepper.
  2. Cut chicken into even cubes and toss with marinade. Marinate for at least 30 minutes.
  3. Thread chicken onto skewers and preheat grill to medium-high heat.
  4. Grill skewers for 10–12 minutes, turning often, until chicken reaches 165°F.
