- Whisk coconut milk, fish sauce, lime juice, garlic, ginger, lemongrass, curry paste, turmeric, salt, and pepper.
- Cut chicken into even cubes and toss with marinade. Marinate for at least 30 minutes.
- Thread chicken onto skewers and preheat grill to medium-high heat.
- Grill skewers for 10–12 minutes, turning often, until chicken reaches 165°F.
