Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 0.5 cup milk or Greek yogurt
  • 2 tbsp lemon zest
  • 3 tbsp lemon juice
  • 1.5 cups blueberries

Method
 

  1. Preheat oven to 350°F and grease a loaf pan.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Mix sugar, eggs, oil, milk, lemon zest, and lemon juice.
  4. Fold dry ingredients into wet mixture, then gently add blueberries.
  5. Bake for 55–65 minutes until a toothpick comes out clean. Cool completely.
