Ingredients
  

  • 1 cup granulated sugar
  • 0.25 cup unsweetened cocoa powder
  • 0.25 cup cornstarch
  • 0.25 tsp salt
  • 3 cups whole milk
  • 4 egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1 baked pie crust
  • 4 egg whites
  • 0.5 cup granulated sugar for meringue

Method
 

  1. Whisk sugar, cocoa, cornstarch, and salt in a saucepan. Gradually add milk and cook until thickened.
  2. Temper egg yolks, return to pan, then stir in butter and vanilla. Pour into crust.
  3. Beat egg whites to soft peaks, add sugar gradually, and beat until stiff peaks form.
  4. Spread meringue over hot filling, sealing edges. Bake until golden.
