  • 1 cup mashed potatoes, plain
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven and grease a cake pan.
  2. Cream butter and sugar until light and fluffy. Add eggs one at a time.
  3. Mix in mashed potatoes and vanilla until smooth.

  5. Pour batter into pan and bake until a toothpick comes out clean.
