Ingredients
  

  • 0.75 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2.25 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 16 oz cream cheese, softened
  • 0.5 cup granulated sugar for cheesecake
  • 2 large eggs for cheesecake
  • 1 tsp vanilla extract for cheesecake
  • 1.5 cups Fruity Pebbles cereal

Method
 

  1. Prepare cookie dough and press evenly into a lined baking pan. Bake until just set.
  2. Beat cream cheese with sugar and vanilla until smooth, then add eggs one at a time.
  3. Pour cheesecake mixture over the cookie base and smooth the top.
  4. Sprinkle Fruity Pebbles evenly over the cheesecake layer.
  5. Bake until the center is just set. Cool completely, then chill before slicing.
