Ingredients
  

  • 3 overripe bananas, mashed
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon

Method
 

  1. Preheat oven to 350°F. Grease a 9x5-inch loaf pan or line with parchment.
  2. Mash bananas in a large bowl. Stir in eggs, oil or butter, brown sugar, and vanilla until combined.
  3. Whisk flour, baking soda, salt, and cinnamon in a separate bowl. Add to wet ingredients and stir gently.
  4. Fold in optional nuts or chocolate chips. Pour batter into prepared pan.
  5. Bake 50–60 minutes or until a toothpick comes out clean. Cool before slicing.
