Ingredients
  

  • 20 oz cheese ravioli
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lb asparagus, trimmed and cut
  • 1.5 cups cherry tomatoes, halved
  • 0.25 cup fresh herbs, chopped
  • salt and black pepper to taste
  • 0.25 cup grated Parmesan cheese

Method
 

  1. Cook ravioli in salted boiling water according to package directions. Reserve some pasta water and drain.
  2. Heat olive oil in a skillet and sauté garlic until fragrant.
  3. Add asparagus and cook until crisp-tender. Stir in tomatoes and season.
  4. Add ravioli and a splash of pasta water. Toss gently to combine.
  5. Remove from heat, add fresh herbs and Parmesan, and serve.
