- Slice onions and place them in the bottom of the slow cooker.
- Season chicken with salt and pepper and place on top of onions.
- Add garlic, bay leaf, thyme, olive oil, and broth.
- Cover and cook on low until chicken is tender and fully cooked.
- Remove bay leaf, adjust seasoning, and serve with sauce spooned over chicken.
