Ingredients
  

  • 2 lb boneless skinless chicken breasts or thighs
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef or chicken broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp olive oil
  • salt and black pepper to taste

Method
 

  1. Slice onions and place them in the bottom of the slow cooker.
  2. Season chicken with salt and pepper and place on top of onions.
  3. Add garlic, bay leaf, thyme, olive oil, and broth.
  4. Cover and cook on low until chicken is tender and fully cooked.
  5. Remove bay leaf, adjust seasoning, and serve with sauce spooned over chicken.
