Ingredients
  

  • 8 flour tortillas
  • 8 large eggs
  • 1 lb breakfast sausage
  • 2 cups shredded cheese
  • 3 tbsp all-purpose flour
  • 2.5 cups milk
  • salt and black pepper to taste

Method
 

  1. Cook sausage in a skillet until browned. Remove half for filling.
  2. Scramble eggs until just set and combine with sausage and cheese.
  3. Fill tortillas, roll, and place seam-side down in a baking dish.
  4. Add flour to remaining sausage, whisk in milk, and cook until thickened.
  5. Pour gravy over enchiladas and bake until bubbly and hot.
