Ingredients
  

  • 1 lb shrimp, peeled and deveined
  • 3 cups cooked long-grain rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 1/2 tsp Cajun seasoning
  • salt and pepper to taste

Method
 

  1. Heat oil in a large skillet and cook onion, bell pepper, and celery until softened.
  2. Add garlic and cook briefly until fragrant.
  3. Stir in cooked rice and seasonings until well combined.
  4. Add shrimp and cook until pink and fully cooked. Serve warm.
