Ingredients
  

  • 4-6 ears of fresh corn, husks removed
  • 1 tablespoon olive oil
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream or Greek yogurt
  • 0.5 cup crumbled cotija cheese or feta
  • 1-2 tablespoons chili powder
  • 1-2 teaspoons smoked paprika (optional)
  • 2 cloves garlic, minced (optional)
  • 2 limes, juiced
  • salt and pepper to taste
  • fresh cilantro, chopped

Method
 

  1. Cook corn by grilling, boiling, or air frying until tender and lightly charred.
  2. Mix mayonnaise, sour cream, lime juice, chili powder, garlic, salt, and pepper in a bowl.
  3. Coat warm corn evenly with the creamy mixture.
  4. Sprinkle with cotija cheese, cilantro, and extra chili powder.
  5. Serve immediately with lime wedges.
