Ingredients
  

  • 8 oz thin spaghetti or angel hair
  • 1 lb medium shrimp, peeled and deveined
  • 1 tbsp coconut oil or olive oil
  • 2 cloves garlic, minced (divided)
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1 tbsp chopped parsley
  • 1/2 cup mayonnaise
  • 1/3 cup Thai sweet chili sauce
  • 1 tbsp lime juice
  • 1/4 tsp red pepper flakes

Method
 

  1. Whisk together mayonnaise, sweet chili sauce, half the garlic, lime juice, and red pepper flakes in a bowl.
  2. Cook pasta in salted boiling water according to package directions. Drain and set aside.
  3. Season shrimp with remaining garlic, paprika, and black pepper.
  4. Heat coconut oil in a skillet over medium-high heat. Cook shrimp for 6–8 minutes until pink and opaque.
  5. Combine hot pasta, cooked shrimp, and prepared sauce in a large bowl. Toss to coat evenly.
  6. Garnish with parsley. Serve immediately with optional green onions, lime wedges, or sesame seeds.
