Ingredients
  

  • 8 oz linguine pasta
  • 1 lb boneless skinless chicken breasts, cubed
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1 dash cayenne pepper
  • 14 oz diced tomatoes, drained
  • 1 cup heavy cream
  • 1/2 lemon lemon juice

Equipment

Method
 

  1. Cook linguine in salted water until al dente. Reserve pasta water and drain.
  2. Season chicken with salt and pepper and sear in oil until golden and cooked through. Remove and set aside.
  3. Melt butter in the same skillet. Sauté onion until soft, then add garlic and ginger.
  4. Stir in spices and cook briefly. Add tomatoes and simmer for 5 minutes.
  5. Add cream and simmer until slightly thickened. Stir in lemon juice.
  6. Return chicken and linguine to the skillet. Toss to coat, adding pasta water if needed.
